We are actively searching for an Overnight Cleaner

Job Summary

The Overnight Cleaner supports the hotel's restaurant and banquet operations by maintaining a clean, safe, and sanitary back-of-house environment. This role ensures all dishware, equipment, and kitchen areas are cleaned and sanitized to hotel and health department standards, enabling smooth service for late-night prep and next-day operations.

Key Responsibilities:

  • Operate and maintain dishwashing machines; ensure proper setup, chemical levels, and temperature for effective sanitization.
  • Wash and sanitize all china, glassware, silverware, pots, pans, utensils, and smallwares used by Restaurant, Kitchen, Banquets, In-Room Dining, and the Post Room.
  • Hand-wash delicate or oversized items as needed; properly air-dry and store cleaned items to prevent contamination.
  • Monitor dish machine temperature and sanitation logs; report variances and escalate maintenance needs promptly.
  • Break down cardboard boxes and transport recyclables to designated areas; empty and replace liners for all trash and compost receptacles; safely transport waste to dumpsters/compactos.
  • Clean and sanitize kitchen walls, doors, handles, trash areas, and other high-touch surfaces as scheduled or assigned.
  • Clean and sanitize floor mats; sweep, mop, and detail the entire kitchen and stewarding areas daily; use wet-floor signage and keep floors dry and free of debris.
  • Assist with routine cleaning of ovens, hoods, fryers, refrigerators, freezers, and other back-of-house equipment per cleaning schedules.
  • Deep clean sinks, drains, and dish areas; maintain proper separation of clean and dirty zones.
  • Stock and organize stewarding supplies (chemicals, detergents, racks, liners, gloves); notify leadership when inventory is low.
  • Follow all safety, food safety (HACCP), and sanitation standards; use PPE and chemical handling procedures correctly.
  • Collaborate closely with Starlite, Kitchen, Banquets, IRD, and the Post Room teams to meet operational needs and timelines.
  • Complete opening/closing checklists and required documentation accurately and on time.
  • Support additional cleaning projects and other duties as assigned.
Qualifications:
  • Previous stewarding/dishwashing or commercial kitchen cleaning experience preferred; hotel or banquet environment a plus.
  • Ability to operate dish machines and understand basic sanitation/temperature requirements.
  • Knowledge of safe chemical handling and cleaning procedures
  • Strong attention to detail, time management, and ability to follow checklists with minimal supervision.
  • Ability to work overnight shifts, weekends, and holidays as needed.
  • Effective communication and teamwork skills.
Physical Requirements:
  • Ability to stand and walk for extended periods.
  • Frequent bending, reaching, pushing, and pulling.
  • Ability to lift, move, and transport up to 50 lbs safely.
  • Comfortable working in hot, humid, or wet conditions; exposure to cleaning chemicals with proper PPE.
