DESCRIPTION OF DUTIES: In conjunction with the VP of Culinary, the General Manager of Cake Kitchen leads the Commissary Culinary operations by setting the satellite* bakeries up for success. This occurs through proper forecasting, cost analysis, planning, staffing, & purchasing.
(*bakery location(s) the commissary supports with baked goods)
Responsibilities Include, but are not limited to:
Product
- Ensures each satellite bakery is fully stocked with products at all times
- Ensures quality of all baked goods produced at Commissary are 100% up to standards
- Ensures products are leaving Commissary properly handled & in a timely manner to get to satellites with ample time prior to opening
- Ensures food costs at Commissary meet or exceed budget
Operations
- Writes culinary schedules to ensure proper allocation of resources, coverage and training. Ensures operational efficiencies and enforces appropriate standards.
- Observes culinary operations and makes recommendations for improving efficiencies to VP of Culinary
- Operates a seamless production environment by adhering to all SOPs and recipes
People
- Serves as a coach and is involved (and present for) all stages at Cake Kitchen. Ensures follow up on Clear Company talent queue
- Approves 30-day reviews and annual performance appraisals (VP of Culinary continues to support delivery of corrective/performance documentation and other difficult conversations)
- Trains team members in accordance with checklists and training tracker
- Mentors and leads team members, develops skills, knowledge, efficiencies, and abilities
- Develops, implements and monitors development and 2x2 succession plans.
- Reviews and approves labor schedules in accordance with labor budget
- Oversees ordering and inventory using order guides and month-end inventory
- Manages shelf life and production waste and works with GMs to manage pars accordingly
- Works with VP of Culinary (who is the final authority) to accept out of the ordinary product requests or turning down orders
Equipment, Maintenance & Safety
- Ensures a clean, organized and safe bakery work environment
- First point of contact for equipment issues; troubleshoots and if necessary, sends request to the VP of Culinary for approval
Communication
- Reads waste log on a weekly basis and follows up with VP of Culinary
- Holds daily pre-shifts with the CAK team to assure menu transitions, internal notes updates, recipes changes and all Company communication is communicated
Training
- Oversees training plans for implementation, training and testing of culinary technique and product execution
- Supports the training of all new CT team members
- Manages all CT Training Trackers
- Ability to transport product and make deliveries when needed
- Arranges coverage for leave of absences, vacations, staffing voids and other extenuating circumstances
- Lives and models the SC mission, values and goals daily
- Other projects and responsibilities may be assigned at the discretion of SusieCakes
- Ability to work in multiple regional locations

Physical Requirements
- Frequent walking, kneeling, bending and reaching overhead
- Must be able to lift, move and carry up to 50 pounds
Must be able to sit down for long periods of time to use a computer
In accordance with California law, the expected salary range for this California position is between $80,000 and $90,000 per year. The actual compensation will be determined based on experience and other factors permitted by law.
